- Parsley contains 22 known phytonutrients including flavonoids, carotenoids, coumarins, terpenes, phenolic acids, phthalides, and polyacetylenes.
- Parsley may reduce the carcinogenic risk of some foods and is protective against some forms of cancer.
General: Parsley is a very nutritious “green food.” It is high in chlorophyll and rich in vitamins A, B and C (three times more vitamin C than citrus). Parsley contains several minerals such as iron (more than in any other green vegetable), copper, potassium, calcium and manganese.
