General: Black eyed peas are legumes. They are a good source of soluble and insoluble fiber and proteins (25%). They are exceptionally rich in iron, magnesium, copper, manganese, zinc, phosphorus, calcium, and potassium. They are a solid source of vitamin B1, vitamin B6, folic acid, niacin, and vitamin C. They also contain protease inhibitors.
Parts used: Whole peas that are first cooked, then freeze dried.
